Nearly 20 years after its initial introduction aboard the Grand Princess in 1998, Princess Cruises is updating its Sabatini's Italian Trattoria specialty restaurant in partnership with Italian Chef Angelo Auriana.
The enhanced dining experience will first debut on the multi-million-dollar refurbished Caribbean Princess with a new design and menu. The new contemporary decor will still evoke a traditional rustic flavor while course highlights will include antipasti and handmade pasta dishes from Chef Auriana, along with family recipes from Italian Princess executive chefs.
The menu will first roll out on the Caribbean as well as the original Grand Princess this month. It will be available in the months to follow fleet-wide.
"Sabatini's has always been a Princess guest favorite and this new collaboration with Chef Auriana elevates our Italian heritage, continuing our fresh approach to authentic Italian dining," said Mario Siebaldi, Princess Cruises senior vice president guest operations, in a press release.
"Also featuring a beautifully transformed ambience, the new Sabatini's Italian Trattoria will delight new and returning guests alike."
Chef Auriana is the executive chef and partner at The Factory Kitchen and Officine BRERA in Los Angeles, taking inspiration from Northern Italy and his own hometown of Bergamo. He focuses on old-world grains such as buckwheat and durum as well as contemporary ingredients like mint and marjoram.
As such, menu offerings will encompass Picagge with marjoram-infused long pasta, white prawns, clams, artichoke pesto and ligurian olive oil; Tortelloni with mint-speckled pasta, roasted lamb, pecorino crosta nera, cacio e pepe sauce and broccoli rabe; Pappardelle with wide ribbon pasta, celeriac and nebbiolo-braised beef cheek; Risotto with vialone nano rice, beets dolce latte, gorgonzola and pistachios; and Torchietti with whole wheat pasta, foraged mushrooms and rosemary oil.

"In my hometown of Bergamo, Italy, I was born with an appreciation for the beautiful flavors of Northern Italy that I love to incorporate into my cooking," said Chef Auriana, in the release.
"Now I'm pleased to share that appreciation through delicious new Sabatini's menu items made fresh daily and served exclusively onboard Princess."
Besides Auriana, the majority of Princess chefs are Italian, and their family recipes are also showcased on the menu such as Roman Seafood al Cartoccio with grouper, shrimp, black mussels, scallops, potato and artichoke; Porchetta with rolled pork belly toscana, fennel seeds, potatoes, spinach and roasted tomato; and Breaded Veal Vallet with marjoram roasted potatoes & artichokes, sun-dried tomato and provolone.
The wine menu will feature all Italian varieties, plus Italian cocktails and Limoncello liqueurs for a premium on top of the dinner surcharge. The meal costs $25 per person for four courses plus dessert. Additionally, Sabatini's Italian Trattoria will soon offer pasta-making courses.
