Chiles en nogada is a poblano chile stuffed with meat prepared with walnut cream and pomegranate. It's made during the holidays and the colors are set to represent the Mexican flag.
Mole is another popular dish with a variety of ways to make it, such as "mole prieto, green, white, mole de olla, and almond mole," per the Xcaret blogger.
Sopes, chilaquiles, huaraches, empanadas, quesadillas, tostadas and enchiladas all have a base of tortilla, cheese and cream. You can't go wrong with any of these for breakfast, lunch or dinner!
And of course, the tortillas are best when made fresh by hand. Surely you've had white corn tortillas, but next time you should try the blue or purple corn tortillas too.

Per the Xcaret blogger, "it is estimated that we have more than 64 types of chilies" in Mexico. Chances are you've heard of jalapenos, poblanos, chipotles and habanero chilies, but there is also serrano, seco, de rbol and cascabel chilies that are frequently used in Mexico.
Tamales are most commonly wrapped in corn, but they can also be wrapped in banana leaves, avocado, maguey or bijao.
Chocolate is a favorite among many around the world, but in Mexico, you'll find it prepared as a drink. However, it's about 90 percent bitter chocolate and prepared with water, as well as spices, pepper and no sugar.
